Sunshine Muffins

Jenny loves sunshine!  She pulls her
blankies to the light that shines in on
the floor so she can lay in the sun.


Jenny, are you going to lay in the sun?


"I need more blankies."

rearranges her blankies around the house.


Do you have enough blankies now?


"I suppose."


Jenny!  I think I have a great idea!


Let's make Sunshine Muffins!


"Do they feel warm on your fur?"


First you need to smash a ripe banana.


Then, mix in an egg and some honey.


Then mix in some peanut butter. 
Jenny sprang up off the floor when
she smelled the peanut butter!


Mix the dry ingredients in another bowl.
Some people believe baking powder to be
toxic to dogs, but if you only use a little in
a baked good, it will be fine. 


Then stir the dry ingredients into the wet ones.


Line a mini muffin pan with cupcake liners.


Fill the muffin cups with batter.
"A little to the right, please!"


Bake for 30 minutes.


I think I might go lie down on the carpet this time.


"I can still see the oven from here." 


"I heard the timer go off."


You're right, but they do need to cool a little.

"I think I like sunshine muffins as much as
real sunshine!"


Here is the full recipe.
1 egg
2 T. honey
1 ripe banana
1/4 cup peanut butter
3 1/2 cups whole wheat flour
1 t. baking powder
1 t. cinnamon

Preheat oven to 350 degrees.  In a bowl, whisk together the egg, honey, banana, and peanut butter.  Stir in 3 cups water; whisk until smooth.  In a separate bowl, stir together the flour, baking powder, and cinnamon.  Add to the egg mixture.  Line mini muffin tin with liners.  Fill each cup and bake until browned, about 30 minutes.  Let cool.  I store mine in the refrigerator.

  2. Jenny I love the sunshine too! Love how you pull your blankies around the house looking for that perfect spot..I think that deserves a tasty muffin for sure!
